Why do I love frittatas? It’s a breakfast omelette that gives you all the nutrients you need in one easy dish! With feta to add a creamy zesty taste and pumpkin to add texture and crunch, and a low-carb/high protein content, this is one recipe you’ll be sure to enjoy too.

Here’s what you need:
- Egg whites 6 large
- Whole eggs 2 large
- Low-fat feta cheese, crumbled ½ cup
- Salt 1 pinch
- Pepper 1 pinch
- Olive oil cooking spray
- Spinach 2 cups
- Broccoli florets (small) ¼ cup
- Pumpkin seeds ¼ cup
- Peas (frozen) ¼ cup
- Zucchini ¼ cup
- Green onion (small, diced) ¼ cup
- Garlic (minced) 2 tbsp
- Ham deli meat (diced) 150g
(Servings: 4 small)
Instructions
Whisk egg whites, eggs, salt and pepper together in a mixing bowl. Preheat a large non-stick frying pan on a medium heat. Lightly coat with olive oil spray. Add spinach and sauté for 10-30 seconds, stirring frequently. Add the pumpkin seeds, broccoli, peas, zucchini, onion and garlic. Sauté for 1 minute. Evenly pour the egg mixture over the veggies in the pan. Cook for 2mins or until the top of the mixture begins to bubble. Evenly spread the cheese and ham on top of the frittata. Turn oven on to broil. Place pan in oven until egg is cooked (approx. 3-5mins). Remove from the oven, place onto a plate and serve!
