Everybody loves chocolate chip muffins. Even though these muffins are a lower-sugar version of the generic McCafe style, they’re still not low in total carbs, so make sure you treat yourself to these as a reward AFTER you’ve completed your workout!
Prep & Cooking time: 20mins
Here’s what you need:
- Unsalted butter ½ cup
- Whole eggs 4
- Coconut milk ¼ cup
- Pure vanilla extract 1 tsp
- Whole wheat flour 2 cups
- Chocolate protein powder 150g ie. 6 scoops
- Cocoa powder 1 tbsp
- Baking powder 1 tsp
- Splenda 1 tsp
- Chocolate chips ½ cup
(Servings: 6 large or 12 small)
Instructions
Preheat oven to 180°C. Put all ingredients together in a mixing bowl and stir with a wooden spoon until combined. Lightly coat a non-stick muffin pan with spray and fill each muffin tin almost to the top. Place in the oven and bake 10 minutes or until the top is set. Cool, and store in the freezer, individually wrapped. Enjoy!
