Banana Nut Protein Squares

I love the smell of banana bread! Here’s a healthier alternative with less carbs and fat and more protein – and tastes just as good.

Prep & Cooking time:  15mins           

Here’s what you need:

  • Banana                                        ½ cup
  • Whole eggs                                 2 large
  • Cottage cheese                          ¼ cup
  • Rolled Oats                                ½ cup
  • Walnut meal                                2 cups
  • Vanilla protein powder                6 scoops/150g protein                  
  • Baking soda                               ¼  teaspoon
  • Salt                                           ¼ teaspoon
  • Olive oil cooking spray

(Servings: 8 small)

Instructions

Preheat oven to 180° C. Whisk the eggs and then combine with cottage cheese and banana. Combine the oats, walnut meal, protein powder, baking soda and salt and stir until evenly mixed. Slowly add the add/banana mix to the dry ingredients until incorporated. Lightly coat a 22cm x 22cm  baking pan with spray and then transfer mixture into the pan. Bake for 10-15mins, careful not to over-bake or the squares will be too dry. Cool, slice and store in the fridge individually wrapped. Enjoy!
